Festive Mince Pies



This is such an unbelievably easy mince pie recipe....

It goes without saying that the humble mince pie is a Christmas staple.  No home would be complete without them during the festive season.  Nothing quiet beats the smell of freshly baked mince pies piled up high on cooling racks in the kitchen.  Any excuse to have a cup of tea and a mince pie; a friend's coming round "Lets get the mince pies out", there's a good Christmas film on the TV "Lets get the mince pies out", it's cold outside "Lets get the mince pies out" ....and so it goes on.  Lets face it, it'd be pretty hard to imagine Christmas without them.

Mince pies originally had a few names, including "Christmas pie", "mutton pie" and "shrid pie".  They were traditionally made with mincemeat (hence the name), cinnamon, nutmeg, suet and a variety of fruits, baked as a large oblong pie rather than the smaller ones we know today.  During the Victorian times, people continued to eat the traditional Christmas pie, but the recipe became sweeter and reduced in size.  Today, a lot of our Christmas traditions come from the Victorians including the mince pie.  Usually made with fruit instead of minced meat it remains a popular seasonal treat.

I always go for shop-bought mincemeat but this year I decided to go all out and make my own.  In case you missed it, you can follow this recipe here

Here's how I made my mince pies!


Ingredients
  • 500g flour
  • 1 pinch salt
  • 120g butter, cut into cubes
  • 2 eggs, beaten
  • Homemade mincemeat
  • Icing sugar for dusting

Method

1. Preheat the oven to 200ºC (390ºF)
2. Sift the flour and salt together in a bowl.
3. Add the butter and rub into the dry ingredients until it looks like breadcrumbs.
4. Fold in one of the beaten eggs until a dough forms.
5. Knead the dough lightly by hand on a floured surface.
6. Roll out the pastry on a lightly floured surface and cut out 18 rounds for the base and 18 star shapes for the tops.
7. Line 2 12-hole cake trays with a little bit of butter and add the rounds to the bottom of the trays.
8. Add a generous teaspoon of mincemeat into the pastry case, add a pastry star on top and brush with a little of the second beaten egg.
9. Bake in the oven for 12-15 minutes or until golden brown.
10. Allow to cool, dust with a little icing sugar and serve.


These were super simple to make and turned out very well.  Making them reminded me so much of being home in the U.K. at Christmas time.  Give this recipe a go and let me know in the comments if you liked them.

How I'm Wearing Jumpers This Winter

Fruit Mincemeat



As the fruit mince meat simmers on the stove and fills my flat with a cosy Christmas smell, a nostalgic feeling fills my mind of Christmas time in the U.K.  One thing I love about Christmas is all the festive food available this time of year, particularly the sweet treats.

Nothing says Christmas quite like the smell of festive baking.  Usually, I love making mince pies during Christmas and this year I wanted to make some to remind me of home.  I just had one problem!  Fruit mincemeat isn't a thing here in Colombia so I was going to have to make a recipe from scratch if I could get hold of all the ingredients.  I tried out this simple recipe which turned out really well.  I like it because it's a healthy option if you don't want to add alcohol to the mixture, which is usually suggested in most recipes.  You can add a bit of brandy or sherry to this recipe but I chose to make it without.

The recipe is enough for approximately 20 mince pies but you could double the recipe if you wanted to make more.  I think it would also make a great gift for friends and family in little Kilner jars.

Here's how I made mine;

Ingredients

  • 250g apples*
  • 125g raisins
  • 50g dried cranberries
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • zest of 1 orange
  • 1 tsp vanilla essence 
  • 250ml orange juice
  • 1 cinnamon stick

* red apples such as, pink lady or gala are good apples to use as they are naturally sweet




Method

1. Finely dice the apples (with the skins on).
2. Combine the apples, raisins and cranberries into a pan.
3. Add the orange juice, cinnamon, nutmeg, ginger, vanilla essence and orange zest.
4. Cover the pan and simmer on a gentle heat for 30 minutes, stirring every now and again.
5. Add a little more orange juice if needed and simmer for another 30 minutes.
6. Turn off the heat, if you want you could add a slash of brandy or sherry to make it a little more festive.  The fruit mince meat is now ready to enjoy (my mince pie recipe is coming very soon).



I couldn't believe how easy it was to make this.  I'm planning to use this fruit mix to make some mince pies, this recipe will be coming to my blog soon so keep an eye out for that.  I can't wait to enjoy a festive mince pie whilst watching a nice Christmas film.

Getting In The Festive Mood



This year I could wait to start decorating my tree....

I love decorating for Christmas and look forward to it each year. Being in a new home this Christmas, I wanted to make it extra special and decorate it in a way was to my taste.  I couldn't wait to start planning colour schemes and what decorations to buy.  To be honest, this is something I've been excited for since we moved into our new place.  I've been desperate for December to arrive so I could get the tree up and make our new home super cosy and festive.

I must have started buying my decorations in October.  I know this is quite early but I saw so many lovely decorations and wanted to buy them before they were gone.  This year I really like the autumnal tones that have been in all of the shops and opted for champagne colours with hints of blush rose gold & brown to accent the tree.  I wanted to go for something a little different than the tradition reds and greens that come around every year.  However, I feel because these a autumnal colours they won't date for a while and the blush tones could easily be replaced with other colours if I fancy a change one year.



To plan my tree I started off by emptying everything out onto the floor.  I find this helps so I can see exactly what I have in terms of colours, sizes etc.  Usually, I start off by adding the bigger decorations first, mostly to the bottom of my tree, then work my way up to the top adding the smaller decorations at the top.  Finishing it off by adding the star at the top.

              

A trend I've been seeing for quite a few years which I really love is winter woodland animals.  Some are more traditional in natural colours and textures while others are more modern in glitzy metallic hues.  This year I bought a glittery reindeer in a rose gold colour to match the colours of my tree decorations.  It looks very pretty and makes a nice little feature in the living room.  The high street have some lovely ones available at the moment.  These are some of my favourites;

 I haven't gone too crazy with other decorations around the house this year.  I recently posted about a DIY wreath centre piece I made which you can read here that looks great and adds a little festive touch to the dinning room table.  Plus, I added two reindeer argyle stockings next to the tree.  We don't have a fireplace in our living room so I had to make do with hooking them onto the TV unit.  Not exactly the same as adding them to a cosy mantelpiece but it still adds a nice touch next to the Christmas tree.  I'm also still waiting for my stocking to be filled..... (hahaha!)


To get me in the mood whilst I'm decorating the tree I put on a real festive Christmas film.  I love watching 'It's A Wonderful Life'.  It has to be my ultimate favourite Christmas film and it really helps me get in the mood, followed by a classic Christmas playlist.   Growing up I was so used to Christmas being during winter, with the cold weather and cosyness that comes with that time of year.  I have to say, it sometimes feels hard to get into the festive spirit when you're living in a country that has no seasons and is usually quite warm this time of year.  However, I'm truly feeling all the festive vibes this year and I'm loving it.

My Top 5 Essential Kitchen Gadgets

These are my top 5 kitchen gadgets that I wouldn't be without.

I love kitchen gadgets and I often get sucked into buying them.  To be honest, I've had many over the years.  Regrettably, some have only been fads which I've only used once or twice before they get shoved to the back of my kitchen cupboard and forgotten about until I decide to organise the cupboards, resulting in them being donated to charity.  It's such a waste of money and I've tried to be a little more conscious of the things I'm buying.  Before making any purchase I will always ask myself two things; "Is this necessary?" and "Will I be using this in a years time?".  If the answer either of these questions is "No" then I won't make the purchase.  This technique has helped so much over the past few years as I'm trying to live with as little junk and clutter as possible - but I think this is a whole other blog post in general!

However, there are some kitchen gadgets which I feel are a really good investment & are an essential to any kitchen.  Having good kitchen gadgets makes a lot of difference when you're preparing meals.  They make your life easier for preparing quick and easy meals.  Plus, I find it encourages me to make healthier meals from scratch.

No. 1
A NUTRiBULLET

The first gadget on my list is a NutriBullet.  I bought mine earlier this year and have found it so simple to make delicious juices and smoothies as well as protein shakes.  I particularly use mine to make smoothies, you can check out my detoxing green smoothie recipe linked here.  A good benefit of using a NutriBullet is that the cup turns into a drinking cup leaving minimal clean up.  Plus, it's super quick and easy to clean so this is a double bonus.  It's also very compact, so unlike a blender that's very bulky, the NutriBullet is easy to store and doesn't take up much room whether it's in your kitchen cupboards or on your kitchen worktops; which is where I like to keep mine because I use mine pretty much every  day.

They start off at around £39.99 which may seem a little bit expensive but you really do get your money's worth from them.  I use mine every day!  There are also accessory kits you can buy too.  They're available to buy in a lot of places but you can check them out here on Amazon as they stock a wide variety of models along with the accessory kits.

A SPIRALIZER

These gadgets are great for spiralizing all kinds of fruit and veggies.  In particular, I love using it to make courgetti which is a good alternative to having pasta spaghetti if you want to avoid carbs or you can't eat products containing gluten.  I often now have bolognese with courgetti as it's a good healthy swap that I've made in my diet.  A couple of other dishes I like to use it in are when I'm making salads and Pad Thai Noodles.  It's quick and doesn't take any longer to do than it would to chop the veggies.  What I like about the spiralizer is that it spiralizes the veggies thinly so that the dish doesn't look heavy on your plate.

The one I have comes with three different blades but you can also get ones that come with more.  Another advantage is that it make cooking in the kitchen really fun.  This may sound like a silly, unimportant reason but things that make cooking fun are always a plus.

A RICE COOKER

For years I cooked rice the normal way by boiling it on the stove but I find that it always gets very sticky in the pan and is never exactly how I want it.  I'd always wondered if rice cookers were any good and decided to invest one and I'm so glad I did now.  It's so simple to prepare, in my rice cooker you just add a cup of water to every cup of rice and switch the cooker on.  It knows exactly how long to cook the rice, which is usually between 15-20 minutes.  After it's cooked you then stir it with a rice spoon and leave it to steam for 5-10 minutes before serving - it just couldn't be simpler.  I find it makes it so much easier to focus on preparing the actual meal I'm making and I don't have to worry about the rice.

The added bonus of rice cookers is that they often non-stick which makes for easy clean up and some often function as a steamer as well which means less storage space as you don't have to store as many gadgets in your cupboards.  I wish I had of invested in a rice cooker sooner because it makes cooking in the kitchen so much easier.

A HAND BLENDER

I find this gadget is so helpful.  I often make homemade soups and this come in handy and is so much easier than using a blender as I can make the soup and blend it up while it's still in the pan, rather than having to transfer it into the pan.  Similar to the NutriBullet, cleaning it is much easier than a blender.  They often tend to come with different attachments too so they double up as other appliances which really helps to condense the space

GOOD TOOLS

My last gadget is having the right kitchen tools for you.  By this, I mean having the right ones for the types of food you make on a regular basis.  It's worth investing in decent tools for your kitchen and ones that you are going to find most useful.  For me, that is having a good quality garlic crusher and hand juice.  In the meals I make I'm often using a lot of garlic and having a garlic crusher makes the task easier when adding it to the other ingredients.  Something else I add to my food is lime and lemon juice so I find it really useful to have a juicer on hand.

Of course, it depends on what types of food you prepare so you should buy the tools that are suitable for you.  Over time I've discover the tools that are useful for me by taking the time to think about what meals I make and what kitchen tools make it easier to prepare those meals.  From there I've discovered the best tools for me that make cooking the kitchen easier for me.

DIY Christmas Wreath



See how I made this beautiful centre piece for my dinning table.


This year I wanted a centre piece for my new dinning table but I was having trouble finding exactly what I wanted.  During my trips around various shops I noticed that they had plain wreaths and decor that I could use to make my own.

I didn't need to use an awful lot to make it, just a plain wreath, some pine cones and a berry spray.  Plus, I used a glue gun to fix the decor in place.  Firstly, I took the plain wreath and fluffed out the branches to make it look a lot fuller.  Then I took the berry spray and placed it how I wanted it on the wreath.  Luckily, the spray I bought had wire in it so I was able to mould it into shape around the wreath.  I used a tiny amount of glue to fix it in place but with the wire it wasn't necessary to use a lot.

Finally, I positioned the pine cones in place and glued them to the wreath.  I used a mixture of both plain brown pine cones and sparkly rose gold pine cones to add variety and a little more texture.

To style it, I added a candle in the centre.  I love how it turned out and it looks so beautiful on my dinning table.

My Cosy Night Favourites


The weather in Bogota has been very cold lately, filled with a lot of rain. When the weather's like this I much prefer to stay nice and warm inside. I've become very fond of spending cosy nights in at home. I think it's important to set the mood to get so you can relax more. I love getting into some comfy pyjamas & snuggling under the blankets with a cup of tea & some biscuits.

Here are some of my favourites to help me enjoy a cosy night in.

COMFY LOUNGE WEAR

                          
Firstly, I love to get into some comfy lounge wear.  This just helps make me feel all snug.   You can find some of the best lounge wear on the high street this time of year.  During wintertime, the high street sell super cosy ones that are made of soft fabrics, such as, soft fleeces & cottons which make you feel so snuggly when you're wearing them.

These are some of my favourite lounge wear pieces available on the high street at the moment.  I love little fleece pyjama tops & these have been my favourite things to buy.  They're great for wearing around the house with leggings when you want something comfy to wear but don't want to spend the whole day in your pyjamas.

SCENTED CANDLES

I like to set the mood by lighting some fragrant candles.  For candles, I really like the brand Jo Malone, my favourite being the lime, basil and mandarin scent. However, they can be on the rather for the pricey side, costing £67 for the standard 200g size. If you don't want to pay these prices, a great alternative are the luxury candles from Aldi. They offer some beautiful fragrances and leave your home smelling lovely. One thing that's always a necessity for me is having a wide selection of teas in my cupboard so it goes without saying that a good cup of tea is an essential for me when I'm having a cosy night in.  In general, I usually drink green tea and will reach for this blend on a regular basis but sometimes when I'm feeling adventurous I like to pick out another blend just to mix it up a little.  These are a few of my favourites below.

Blueberry, Almond & Pistachio Oat Bars



This year I've been making some changes in my diet to make sure I eat a little more healthier.  I've always been someone who enjoys a sweet treat with my afternoon cup of tea so it's been difficult to find some alternatives that are tasty yet aren't too calorific and have some nutritional value.

These oat bars are the perfect combination of sweetness with healthy, clean ingredients.  First off, the base is made from oats which is a good source of whole grains that lower the risk of diseases, such as high blood pressure and type 2 diabetes.

Other healthy ingredients, such as, bananas, almonds and blueberries are just some of the things that are included and help fight disease, build muscle and burn fat, not to mention satisfying any cravings too!

It's good to know you are putting clean food into your body.  They're super easy and quick to make.  This recipe makes 8 slices so there's more than enough for the week.




Here's how I make them; 

Ingredients

For the base:
500g oats
250g chopped almonds
4 tbsp honey
1 tbsp coconut oil
1 tsp kosher salt
1 1/2 tsp cinnamon
2 mashed bananas
1 1/2 tsp vanilla
For the topping:
125g oats
60g chopped almonds
60g pistachio nuts
250g fresh blueberries
honey for drizzling
1/4 tsp cinnamon


Method

1. Preheat your oven to 175ºC (350ºF).
2. Line a 8x8 baking tin with parchment paper and lightly grease with coconut oil.
3. Add all the base ingredients into a mixing bowl and mix until everything has combined together.
4. Pour the mixture into the baking tin and smooth out until evenly spread.
5. Bake for 10-15 minutes until golden brown.
6. Whilst the oat mixture is in the oven, combine the topping ingredients together.
7. Remove the oat bake from the oven and leave to cool for a few minutes.
8. Once the oat bake has cooled, drizzle a little honey over the top and sprinkle on the topping.
9. Cut into 8 slices and enjoy with a cup of tea.


*These can be kept in the fridge, stored in an airtight container and should be eaten within one week.
